More specifically, I LOVE their waffle fries and seasoned sour cream. I could make an entire meal out of JUST THAT. Some time ago, I Googled for a recipe to replicate their seasoned sour cream. I found one, but when I saved it, apparently I didn’t save the source. I have no idea where I originally found it so I can’t properly credit where I got it from. (Other than the restaurant of course.) I have no idea if it’s the authentic recipe or if it’s just something someone concocted to taste the same. It does taste almost identical. I haven’t sampled them side by side, but when we made this…it was sooo good.

Bob and I made this as a dip for our wedding party. I had the idea to use it as a chip dip—we weren’t serving waffle fries (or any fries) at our party. But I think it would make an excellent veggie dip as well. You know, if you wanted to do something healthy with it. I suppose you could make it with low fat or fat free sour cream and mayo (or Miracle Whip) to make it healthier, but when we made it, we went full-fat and it was excellent.

Also, if you follow the recipe, plan on using it for a party, or eating it in vast quantities, because it makes A LOT. But I suppose it wouldn’t be difficult to cut it down. It might just take some creative finagling with the dry seasonings since there is such small quantities of each. But I can think of a few ways to make that work too.

—

Seasoned Sour Cream

2 cups mayonnaise
2 & 1/4 cups sour cream

1/8 cup lemon juice
1 & 1/8 teaspoons Worcestershire sauce

1/8 cup thinly sliced green onions
1/8 cup finely diced parsley (fresh or dried)

1/2 tablespoon garlic powder
1 & 1/8 teaspoons paprika
1 & 1/8 teaspoons onion powder
1/2 teaspoon celery salt
1/2 teaspoon dill weed
1/2 teaspoon cayenne pepper
1/4 teaspoon curry powder

Mix dry ingredients in a bowl and set aside. Mix mayonnaise and sour cream in a large bowl, add all remaining ingredients mixing until well incorporated. Refrigerate until ready to serve.

Best served with waffle fries. Also goes well with other french fries, potato chips, veggies, or anything else you might want to dip in it. Like a spoon.

—

30 Days of Blogging… Day 21: A Recipe… Champps Americana is one of my favorite restaurants.
