Korean Beef…

I’ve never had Korean food. Not to my knowledge at least. Though usually when I see pictures (recipes, articles, whathaveyou) of such foods, there are a lot of things I think I’d probably like if I had the opportunity to try them. Though unless I actively seek out these foods, I probably won’t be trying any of it anytime soon. Such is life.

I have no idea if this Korean Beef recipe is anywhere near “authentic” (I’m generally dubious about the authenticity of “ethnic” dishes found on food blogs. Just because it has soy sauce doesn’t mean a damn thing.) but it turned out pretty tasty.

Though I used ground turkey instead of ground beef, so technically it’s Korean TURKEY, but…details.

Korean Beefor turkey

Ingredients…
1/2 cup brown sugar
1 tsp ground ginger
1 tsp ground mustard
1 Tbsp onion powder
1 Tbsp garlic powder
1 Tbsp sesame seeds
1/2 tsp red pepper flakes (more or less depending on heat preference, can omit)
1 Tbsp sesame oil
6 Tbsp soy sauce
1/3 cup water
black pepper to taste

1 lb ground turkey (or lean ground beef or chicken)

1/2 cup green onions, sliced (1/4 inch pieces)

Directions…

1.) In a small bowl, combine brown sugar, ginger, mustard, onion, garlic, sesame seeds, red pepper flakes, and black pepper. Mix well.

2.) In a bowl (or measuring cup) combine soy sauce, water, and sesame oil.

3.) Brown meat until no longer pink. (If necessary, drain off excess fat.)

4.) Add brown sugar mix, followed by liquid mix. Stir to combine. Simmer for 5 to 10 minutes.

5.) Add green onions and serve over rice with a side of vegetables.

This one isn’t too terrible on the healthy scale. I always use low sodium soy sauce (even if that’s still ridiculously high) and we generally use ground turkey in place of beef. For Sesame oil a little bit goes a long way in terms of flavor. It comes together fairly quickly (granted I remember to thaw the meat beforehand) so it’s easy enough for a weeknight. I made some roasted broccoli to go on the side and it feeds us for two nights.
