Lemon Blondies…

We like lemon around here. Especially lemon bars. But lemon bars can be time consuming and sometimes a person doesn’t want to wait forever for the lemon bars to set up. The original recipe called these “Cakey Lemon Bar Brownies” or “Lemon Brownies” … as in flavor like a lemon bar, texture of a cakey brownie. It used to be whenever I heard mention of ginger cookies, I thought of the thin, rock-hard, cut-out cookies that show up at Christmastime. Poutine…

I made Poutine. You heard me. I’d heard talk of this Canadian concoction around the intarwebz but I had never tried it. And then there was a new vendor at the MN State Fair last year that sold exactly that—Poutine. I’ve wanted to make my own ever since but just never got around to it. Pinwheels…

There is a wide spectrum of foods called “Pinwheels.” Some savory, some sweet, they are all some sort of rolled-up concoction. With the exception of Pinwheel Cookies—which, admittedly, is usually where my mind first goes when I hear Pinwheel. Chocolate-covered marshmallow on a cookie…I’ll take it. Anyway.
