My house smells like bacon.

Because bacon.

I made bacon, egg, and cheese paninis for dinner. I had eggs that needed to get used and we bought real bacon (thick-cut even) recently. We rarely buy real bacon. We have a supply of turkey bacon in the freezer. It tastes okay…bacon-ish…but it’s just not the same. Every time we have it I feel like I’m being cheated.

I also made pumpkin banana bread. So my house smells like pumpkin banana bread…and bacon. It’s all well and good now when the smells are still fresh. But tomorrow when it still lingers but it’s gone stale, I’m going to want to just move into a whole new house.

I had a couple of veeeeeery ripe bananas sitting on the counter, but not quite enough for my usual banana bread recipe. But I also had a can of pumpkin puree in the cupboard, so I decided to experiment and combine the two. The flavor will be fine. It’s the texture I’m not sure about. Baking involves science and science was always my weakest subject.

It looks good at least.

We’ll find out how the experiment worked when I take it out of the pan.

If this version works, I might try it again with just the pumpkin and no bananas. Bob’s a big pumpkin fan and I’ve yet to find a recipe for pumpkin bread that isn’t ridiculously overly complicated. And also not a solid loaf of fat. This recipe that I use is lower fat than most sweet breads—and doesn’t taste like health food—so I don’t feel so guilty shoving it in my face………with a pile of Cool Whip on it.
